Damak is a single estate cocoa origin located at a saddle to the east of Mount Belum (Gunung Belum). This origin exhibits either a bold profile or a fruity-berry profile depending on two styles of fermentation in oak barrels. Either style is fermented for six days using three turns, then sun dried with a gentle shelter for up to ten days. Chocolate profile is black currant, banana, and a lingering vanilla finish.

We operate a strictly vegetarian kitchen and the chocolates in our menu contain no alcohol. Our kitchen facility has presence of nuts and dairy although not used in every recipe.
